Our Favorite Salad Dressing [Jun. 16th, 2008|06:19 am]

Our favorite salad dressing is the Oriental Chicken Salad dressing from Applebee's. I got this recipe from Cooks.com

Oriental Chicken Salad Like Applebee's

4 breaded chicken breast fillets
1 romaine heart
1 1/2c. coleslaw mix (or finely shredded cabbage)
1/3c. toasted almond slivers or slices (blanched almonds)
1/2c. chow mein noodles

Dressing:
1/3 c. vinegar
1/2c. sugar
3/4 tsp. salt
1 tsp. dry mustard
1 tsp. horseradish
1/4 c. spanish onion, diced
1c. canola oil

I do make some changes in the reciepe. We do handle cabbage very well so I use various types of lettuce. Carrot slivers, mushrooms, almonds and chow mein noodles.

In the dressing I use Splenda instead of sugar, I also do not use the dry mustard or horseradish I use a de-jon or spicy mustard. I also put it all in the food processor and drizzel the canola oil in at the end.

My Cancer Post [Jun. 12th, 2008|07:35 pm]

I can not believe it has been almost a year since my father died. June 24th  5:06 pm.

Cancer has changed our little family here. Mom is very lonely. She is doing ok. She is happy Richard and I are right down stairs. She is also happy we do take care of many things around the house. Cancer has really taken a bite out of the family and trying to take more.

My Aunt Tina is suffering from cancer again and it is coming back strong. She is an amazing women and has always been there for me I would and will do anything for her. She is a hell of a trooper, I got to tell ya.

Then there is my Aunt Jane. Another awesome aunt. She had breast cancer in her right breast 16 years ago. She lot it and a few lymph nodes she has been fine her right arm and hand have been swollen but is has not slowed her down not one bit. Last year she dropped something on her big toe on her right foot. After a year of pain and discomfort and infection, due to the trauma, she was diagnosed with melanoma cancer in her big toe. She got that toe removed down to the first joint and one lymph node in her groin area. She had the surgery done Tuesday and is doing fine. However when she went to get the MRI for her toe they happen to notice something in her left breast. With further tests and then a biopsy, yup, you guessed it. She has cancer in her left breast. That surgery will be in August.

Yes Cancer we are still fighting you. One day you will not win.

So this week I got Mario Kart for the Wii.

This morning I did the WFC and hooked up with my sister and Richard and I raced the kids. It was fun. I got to play a race with them and not have them next to me while enjoying my morning coffee.

Now that is fun.

Today was the kids birthday party at Liberty Lanes. We bowled.
 

 

 

Steven is 7, he had the bowling cake. Gina will be 8 on the 8th and had the Hawaiian theme. We had a great afternoon.

I seems like two weeks have gone by since I last posted. It has been a long week at work. Since I am so dently talented I have worked up in our Stafford office the last two Fridays. I have been working as an assistant. Which is fine, except for the fact when I am working up there I don't get my list of things to do done in my own office. It makes for a stressful, long week in which I can't wait till Friday.

This Friday I worked up there and when I got home I found Mom was on her way to the hospital to see Steven. Seems his Asthma acted up enough to keep in in for observation for Friday and Saturday night.

I guess however I am recapping my week backwards.

Monday was our anniversary.

Wednesday was Steven's 7th birthday party. This is his party with just their little family and Mom and Kenny's Mom and Richard and I. It was a quick little party in which we had cake and birthday presents.
 

They will have a bowling party this Saturday and then Gina will do her actual birthday on May 8th when she will be 8.

I also got a Nintendo DS this week. We did get a nice income tax return so I spend a little of it on myself.
  I got Mario Kart.

I imagine this is the last game I will get for a while. I like the used games, at least that is what works best for me. I have many used games for my PS2 and I really only have Mario Kart Double Dash for my Game Cube. The kids have way more games then I do so they bring over what they want to play and Mom has a Wii so they bring over what they want to play on that. Although with the Wii they get to play on Mom's big screen up stairs.

But anyway. The reason I like the DS is cause they will connect and last night and today we raced. It is fun.

It is a way for us to bond. I love it. And we played like 10 races last night and our score was 100 to 95, he won. Today it was 65 to 40. He won again. Next week I hope to add Gina to the races.

One Day I Had An Idea [Apr. 10th, 2008|08:07 pm]

I was sitting on my bed one afternoon and I thought. "I should go back to school."

So, I think I am.

I think I am going to be taking courses to ultimately attend Radiology school.

It is going to be a long road. I do have to finish paying off my debt and I have to take all my pre-requisites of course. Which is good, I can take those while I am working full time and finish paying my bills off. My big surgery bill and other bills will take 2 1/2 ish years to pay off I estimate, and that is about right more or less depending on things. Which is fine. I will have to go to school full time when I do get accepted to a Radiology school. So Richard will have to take over full financial stuff at that point.

I don't expect to actually start school till the spring session. I will take classes at Germanna Community College.  Until then I plan on brushing up on my Anatomy and Physiology, since it has been like 22 years since I have taken the class. So I got the text book in PDF format right now and I got on the on line Aris support page so I will be studying this till other basic courses come along.

I have applied to the college, I have been accepted. I have just sent for my transcripts from Edinboro University in PA and Beaver Community in PA. Then we will see what else I will need to do.

My father-in-law is a Dr. of History at the college, but the other campus, he told me they were going to start there own Radiology program. Right now the local Hospital has a school of Radiology but only accepts 12 students per year. The college will work with the hospital. There is a demand in the field now and the area is getting two new hospitals soon so there will soon be more of a demand.

I am pretty excited about this. This will also help me in my personal training future as well.

Richard and I want to improve the yard this year. This is his first project, the top slope of the drive way. It started out looking like this.



At the end of the night it looked like this: The cement scalloped edge brick some new dirt and grass seed.



It took a while, but he did get this much done. He put the edging in and spread some new dirt and grass seed. Tomorrow he is going to plant some bulbs of tulips red and yellow and some pretty blueish/purpleish flowers of which I do not know the name, ones over here.

 

So I rewarded him with a steak and baked potato dinner with salad and Mom made cup cakes for dessert.

The Week Of Recovery [Mar. 15th, 2008|05:51 pm]

Well it certainly has been a long week. I did work all week long. Monday night was the only night I did not go anywhere after work. Last night on my way home I called my sister just to say hi. During our conversation she asked me to do her a favor. Her sister-in-law was having a birthday/ice skating party for two of her kids. She had to work today and her husband Kenny through his back out this week. So she asked me to skate with the kids. So I told her OK. I will help her out. Now, it has been about 35 years since I have had ice skates strapped to my feet. Fortunately Richard and I have done some in line skating so that did help. It was fun. Steven did not want to skate at all. Gina and I put on the skates and off we went.









It was fun, no broken bones or sore butts for us. I ended up taking Gina around the rink two times and then I went around by myself two times. When I went around I did not hang on to the wall. I was pretty proud of my self.

Then we did our grocery shopping for the week and now we are home relaxing. Tomorrow will be more of the same.

My Procedure [Mar. 8th, 2008|04:51 pm]

Today is Saturday, my procedure was on Wednesday.

Wednesday I was at the hospital at 6:30 AM. They began the procedure around 8ish and it took just under an hour to do. The Dr. was very excited he said it went extremely well and he feels he will be able to take at least some of my pain away. Wednesday it was hard to talk to anyone. I was so tired I could not keep my eyes open. Several people call, friends and family and I barley remember talking to any of them.

Thursday I was tired but managed to stay awake till I got home at 12 and slept till about 8 the next day only getting up to take my pain meds and potty.

Friday I ran errands in the late morning and late afternoon. I felt better, slightly crampy but was told Saturday and Sunday I would feel much worse then on Friday. So I took care of most all I had to do just in case they were right.

Saturday I woke up at 6AM feeling pretty good so Richard and I went to Gina's Odyssey Of The Mind. Came home and up loaded all the pictures to Walmart to make her her photo album and CD, so she could have it to show her group on Monday. I also got my hair cut and colored today.

I also decided it was time to take a good look at my incision. I thought it looked pretty good so I took a photo of it. For those interested here it is.


The incision area is fine. The part that hurts the most is where the catheter rubbed against my outer lip of my outer lip area. It is complicated by the fact I can not use tampons for 2 weeks and having the pads on rub against that area and push against that lip and it hurts. But, my cramps are not that bad. I am pretty surprised. I think I take myself off the heavy duty pain meds and just take midol. I do still need to take my antibiotic, steroid, and Ibuprofen 800mg.

All and all, I am so far much happier then I was about it on Wednesday night. Thursday the nurse came in and talked to me just after 8am I guess gave me the worse case scenario about not getting back to work till Wednesday. But the way I am feeling now Monday should be no problem at all.

The creative problem-solving process rewards thinking "outside of the box." While conventional thinking has an important place in a well-rounded education, students need to learn how to think creatively and productively."

A Brief History

The Odyssey of the Mind has its roots in the Industrial Design classes of Dr. Sam Micklus, Odyssey of the Mind founder. As a professor at Rowan University in New Jersey (formerly Glassboro State College) Dr. Micklus challenged his students to create vehicles without wheels, mechanical pie throwers and flotation devices that would take them across a course on a lake. He evaluated them not on the success of their solutions, but on the ingenuity applied and the risk involved in trying something new and different. Students had fun. Word spread and the students' activities attracted attention from the local media. Soon, people on the outside wanted a part of the action. This public interest led to the development of a creative problem-solving competition for school children. The Odyssey of the Mind was on its way. Since then, Dr. Micklus's life has been happily consumed with developing problems for other people to solve. His rewards are in the joy and pride of the millions of participants who rise to the challenge of solving those problems.

The kids came up with how to make the props. The boxes they painted and when the set changed they turned the box around. So they had 4 back drops and only used 1 box. The blue box on the floor in the center in front of Gina was the box that said there class group name.

And what is really funny is the long haired girl is a boy by the name of Matthew.

Uterine Fibroids Symptoms, On The Way Out [Mar. 6th, 2008|06:14 pm]

Well, I finally did it. Yesterday morning I  had it done.


Then they do this to it.


So, the blood supply is cut off like this


So my schedule is now sleep, till i have to get up to potty, take pain meds, once in a while and eat once in a while. which I don't feel like doing.

It will take 2-4 months for my body to figure out how to cycle with out the fibroids.

We went over to my sisters last night. While we were there the kids fell into there natural states.

Steven is just beginning to read what the kids now call chapter books.
I said, "oh good, then you can either join Gina and I in our book club, or we can start our own."
"What do you think about that?"
He said "well, there is a problem with that."
I said "what ?"
He said, "I don't like to read."
I said, "well, that would be a problem then, uh."


Then there is Gina. She does like to read and can't get enough of it. The book she picked out

It is a cute book. She actually has started reading it, much to my surprise cause she spends a lot of time reading her school books. This picture was taken last night too. She was next to her brother.


We also went to see cousin Adam yesterday. Here is one of me with both his kids. Ethan and Mia.


We had fun yesterday. We went around visiting family and playing with the kids. Then had a nice quiet evening at home.

The Eclipse [Feb. 20th, 2008|10:07 pm]

Richard and I watched some of the eclipse. We did not watch it all cause it damn cold up here right now. 30 right now with a feels like of 19.

So we go out side and we get a great view from the deck. Set up the tripod so we can keep our hands in our pockets.

We did watch a lot of it. Then we came in and warmed up and then went out again.

Now we are in side where it is warmer.



This past weekend Cindy and Jesse came up Jesse is off to Iraq again for 7 months soon. So we got to see him before he leaves. It was also time to celebrate Anthony's birthday his is 4 now. He is so cute. So we have Anthony, his cake and he and his brother Tommy.


We have been so busy. We are doing a lot of working and going to the gym. There even seems to be a lot of family stuff going on during the weekends. It is all good.

Some day I will up date accordingly.

I guess it has been a while since I posted. But not a lot has been going on.

We have been working, working out, and relaxing hard.

The keys got locked in my bosses office, so we had to break the glass on her office door so she could get home.


Tempered glass looks so cool when it breaks.

Mean while back at the gym.

Richard and I have discovered rowing machine classes.


These are the rowing machines the olympians use to train. I think I will be taking many of these classes.

Yes, having a good time we are.
